Linda's Cheesy Chicken Enchilladas

Oil
Corn Tortillas
White chicken meat shredded (I use canned white chicken I think it's 12oz can, but fresh works too so does the dark meat, my preference is white though)
1/2 pound mozzerella cheese(These two cheeses are my favorites so you can use whatever kind you like - but not soft cheeses!)
1/2 pound cheddar cheese
16oz enchillada sauce
1 cup salsa
Sour cream
Guacamole
Lettuce
Tomatoes

1. Heat about 1" of oil in an omelet pan on medium
2. Shed cheeses and mix
3. Preheat oven to 350
4. Place a tortilla in the hot oil, when it rises to the top take it out
5. Add a small amount of chicken and small amount of cheeses to the center of the tortilla, roll and place into 9"X13"  baking pan
6. Continue making the enchilladas until you fill the pan.
7. Mix enchilada sauce and salsa together, pour over enchilladas in baking pan
8. If you have any remaining chicken, sprinkle it over the enchilladas
9. Cook in the oven until sauce is bubbling (about 20 minutes), remove from the oven
10. Cover the enchilladas with the remaining cheeses (you should have quite a bit left over)
11. Return them to the over until all the cheese is melted.
12. Serve topped with lettuce, tomatoes, sour cream & guacamole.  Good served with mexican rice, refried beans and margaritas!  Flan for dessert!

beibee's "soaking garri"

buy a cup of garri

pour it in a big round bowl

bring out a chilled bottle of water

open the bottle and pour its content
into the bowl of garri

the water should rise above the garri level
so that the garri can rise to your desired amount

look for a wide-mouthed spoon or use your hand
to scoop and drink [is your mouth watering already?!]

if you're rich enough, you can buy "epa" [groundnut, 10 naira...from "aboki"]

or "kulikuli" [homeboys' kola] from "mama ruka" to garnish
the soaked garri

my favourite food is ripe avogado.I just cut it into two pieces ,take the seed out...put salt on it and eat it with a spoon

COCONUT RICE / PORK MEAT:

RECIPES:

1. Rice
2. Coconut
3. Red Pepper
4. Onions
5. Salt
6. Fresh Tomatoes
7. Water
8. Pork Meat

METHOD OF PREPARATION

1. Steam your Meat with the following condiments :- Maggic, Pepper, Salt etc.
2. Par boiled the Rice first
3. Great the coconut to get the fluid
4. Slice the tomatoes into circle shapes and place in a bowl
5. Poured the par boiled Rice in a pot and add the coconut fluid, allowed to boil for 5mins
6. Add pepper, salt, maggic, onions, allow to boil for another 10mins.
7. Add sliced tomatoes and the steamed pork meat, heat for 5min.
8. Served hot.

oooo aminah, I love avacados too!!!  Just the same way.  You know they are very good for uterine health too so we women should be eating them often.

my hubby hates them..but me ..I put them everywhere..even inside the salad...or I cut onions and make a dressing out of it or put it on black bred as a spread....well and actually you can use it also as a face mask....it makes your skin beautiful.in nigeria there is a big avogado tree close to our house....noone cares for the fruits ..but me I am a regular picker....

with you luciemine...

I love garri with gnut a lot with not very cold water, i think that i picked up that habit when i was in a boarding school during my secondaey school days, it's so good to have a food mate like beibee and joebaby.

How can I make these things if y'all don't give me measurements???  Like Joebaby the rice sounds great but if I don't know how much of each thing to use I'll just mess it up - can you tell me how much of everything? please.

MY VERSION OF YAM PORRIGDE
Ingredients:
A tuber of yam
Ripe plantain
Grounded crayfish
Grounded fresh pepper
Periwinkle
Meat diced( steamed)
Ngwu (shredded)
Vegetable oil.

How To:
Peel yam and cut into pieces, note not sliced.  Peel and cut about 3-4 pieces of plantain and add enough water to cover up the yam and plantain.  The plantain gives a sweet taste and shiny look when done.

When soft,add onions, enough crayfish(this is one of the secret of the wonderful taste) , pepper, two cubes of maggi or knorr, salt, diced meat and cover cook well.  Make sure you stir and mix all ingedient well and  Add fried oil with onion, periwinkle and your vegetable to give a colourful look, leave to simmer for about 5 minutes, serve and eat when warm, enjoy your meal.

My favourite food is Eggnog French Toast.

Ingredients
1/2 cup of dairy eggnog
1 egg
4 to 5 slices of thick bread
Powdered sugar (or cinnamon sugar) for dusting
2 tablespoons of butter
Directions
1.  In a small bowl, combine the egg and the eggnog.

2.  Dip sliced bread into the egg mixture.

3.  Turn over the bread and allow to sit in the egg mixture for 2 to 3 minutes per side.

4.  In a skillet, melt 2 tablespoons of butter and salt.

Well i like to eat vegetable pizza. i make it at home. I have a recipe of vegetable pizza.

Ingredients

1 carrot, grated
2 (8 ounce) packages refrigerated crescent rolls
1 cup sour cream
1 (1 ounce) package ranch dressing mix
1 small onion, finely chopped
1 stalk celery, thinly sliced
1/2 cup halved and thinly-sliced radishes
1 red bell pepper, chopped
1 1/2 cups fresh broccoli, chopped
1 (8 ounce) package cream cheese, softened
1 teaspoon dried dill weed
1/4 teaspoon garlic salt

Method to make
Preheat oven to 350 degrees F (175 degrees C).  Spray a jellyroll pan with non-stick cooking spray.
Pat crescent roll dough into a jellyroll pan.  Let stand 5 minutes.  Pierce with fork.
Bake for 10 minutes, let cool.
In a medium-sized mixing bowl, combine sour cream, cream cheese, dill weed, garlic salt and ranch dip mix.  Spread this mixture on top of the cooled crust.  Arrange the onion, carrot, celery, broccoli, radish, bell pepper and broccoli on top of the creamed mixture.  Cover and let chill.  Once chilled, cut it into squares and serve.

4 pieces chicken
1/2 quart buttermilk
1/4- 1/2 cup hot sauce
1 cups flour
1 T kosher salt or Seasoned Salt
1 Tsp Garlic Powder
1 T fresh ground pepper
1 T Poultry Seasoning
1 Tsp Thyme
