Vegetables come in various packs on your table — you can make them into as many soups as you desire. Just as you make Efo riro, you can also have egusi soup, edikang-ikong, vegetable soups made from Ugu, uzuza and lots of greens and you can use them to garnish porridge jollof rice and other recipes.

So why do you need vegetables?

-Fresh vegetable helps get rid of heart disease, stroke, blood pressure, cancer, painful intestinal ailment called diverticulitis, cataract and macular degeneration vision loss.

-Fibre, which is found in many vegetables, helps form soft, bulky stools and it has many positive effects on your health.

-The high fibre content helps control blood glucose levels, may reduce cholesterol and probably reduces the risk of colon cancer and other cancers.

-More than any other foods, they contain essential vitamins and minerals that are vital for good health and disease prevention.

Vegetables are the best food for dieters because they are ultra-low in calories and have minimal fat.

-Vegetables are rich source of minerals and vitamins, including K, C, E, and many of the B vitamins. They also provide variety of phytonutrients including beta-carotene, lutein and zeaxanthin, which protects our cells from damage and our eyes from age-related problem, among many other effects.

-Vegetables form an important part of our daily diet, they are naturally good and contain lots of minerals and vitamins. Health benefits from vitamin K: The key regulator of inflammation, and may help protect us from inflammatory diseases including arthritis.

-They help in the regulation of blood clotting.

-They help in the protection of bone from osteoporosis.

-They may help in the prevention of diabetes.
