Bananas still as nourishing as ever

Bananas are tropical fruits cultivated for food. However, they have many other uses to which they may be put outside of food. Bananas come in curved fingers and are known for their sweet taste.

They offer good nutritional properties such as high potassium, fibre and vitamins such as B6, C and A.

Bananas are said to contain all the eight amino-acids our body cannot produce itself. Bananas are usually yellow when ripe and can be eaten without being cooked. However, they may be cooked, fried or used for homemade cakes, ice creams and juices among others.

Nutritionists would however rather encourage that bananas be eaten uncooked for that natural nutritional value. People who do not wish to eat cooked meals can sometimes do with bananas because of the food-like thick and fleshy nature.

It tends to offer that immediate filling that the stomach needs.  What is more cheering than to remind you that bananas are in season, so take advantage of it.

Banana Fruit Cake



-Brown sugar

-Four eggs

-All-purpose flour

-Chopped walnuts


-Orange juice

-Grated orange rind

-Half teaspoon orange extract

-One teaspoon baking powder

-One teaspoon baking soda

-One teaspoon salt

-Quarter teaspoon ground nutmeg

-Quarter teaspoon ground cloves

-One teaspoon ground cinnamon

-Mashed bananas


-Combine the fruits and walnuts in a large bowl

-Dredge them with a quarter cup of the flour

-Sift the remaining flour together with the baking powder, baking soda, salt, cinnamon, nutmeg and cloves

-Set it aside

-Cream the butter, add the sugar and beat until the mixture is light and fluffy

-Beat in the eggs, one at a time

-Beat in the orange rind, orange juice and orange extract

-Mash the bananas with a fork

-Alternately, stir the bananas and the flour mixture into the creamy mixture

-Stir in the floured fruit and nuts

-Turn into the prepared pans and bake until a skewer inserted into the middle of each cake comes out clean

-Cool in the pans and serve
